Rye Twist

13 pounds of Maris Otter
2 pounds of Vienna
1.5 pounds rye malt
1.5 pounds of wheat malt
2 pounds of Carastan
mashed at 154.
Hop schedule
1 oz Chinook at 60
1/2 oz each Cascade and Centennial at 30
1/2 oz each Cascade Centennial at 10
1/2 oz each of Cascade Centennial Chinook at flameout
Supermoss at 10 minutes
Fermenting at 68 degrees

A Miracle!

Brewing tomorrow, getting ready to dump the Scottish 60/, after all fermentation temps as high as 98! But tasted it first, other than being a little thin, it taste pretty darn good! Go figure! Instead of dumping, I'm kegging!

Chiller Troubles

The homemade glycol chiller worked great, but was very noisy and blew hot air out thru the condenser. By popular demand from the family it had to go. A free freezer happened by my way, it works, but seems my bigger pump generated too much heat, that and what the beer added, was too much for the bucket of water. Beer at 98 degrees. Got rid of the bucket, increased the amount of water in the freezer, still no go. I wanted to stress the yeast for a little extra esters in this brew, but this is over the top. Its running now with a smaller pump, keeping my fingers crossed. My Scottish 60/ may not be the best ale I ever made.

Beer Engine

Next design project is to be a beer engine. Need a stainless steel pump, that can deliver a 1/4 pint per pull. That takes a cylinder, will have to make a piston.....where to buy wipers.......

Scottish Mild

10 pounds of Maris Otter
6 ounces roasted barley
Makes ten gallons of Scottish 60/ ale, fermenting at the high end of Scottish Ale yeast gives a hint of esters, net result a very tasty mild ale!
Will harvest the yeast for grozet and an American Ale.

Vienna Lager Lagering

Made a Vienna Lager two weeks past. 100% Vienna malt and 100% Hallertau Mittelfrau hops.Its now in the lagering stage. Going in was tasty, should be really good after 4 weeks lagering.
